Baked Peaches with Almond Crumble
Ingredients:
4 peaches, preferable freestone varieties
2/3 cup almonds ground
¼ cup light brown sugar or honey
1/4 teaspoon ground cinnamon
2 tablespoons plus 1 teaspoon unsalted butter, softened
vanilla bean ice cream or gelato for serving
Directions:
1. Preheat oven to 350°F.
2. Slice and remove the pits of the peaches by slicing down the center line. Using a teaspoon remove some peach flesh to make a larger cavity or whole for the crumble to sit in. Place peach halves skin side down into a 9”x13” baking dish. Set aside.
3. Make the almond crust by combining ground almonds, brown sugar or honey, cinnamon, and butter in a small bowl. Mix with a wooden spoon or spatula until the mixture forms a homogenous paste. Divide the mixture evenly among the peach halves, filling the cavity where the pit was.
4. Bake peaches for 40-50 minutes or until the peaches are soft and the crust is golden brown. Serve with vanilla ice cream or gelato and whipped cream.
