Coconut Macaroons

Ingredients:

2 large egg whites

2 cups shredded sweetened coconut

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup Traina® Home Grown fruitons® Summer Blend

Directions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.

  2. In a medium bowl, whisk egg whites until frothy. Fold in coconut, vanilla extract, salt, and fruitons®. Stir for 1 minute to ensure that all ingredients are coated in the egg white.

  3. Using a 1 tablespoon scoop, portion out the mixture onto the prepared baking sheet. If needed, use your fingers to compact the mixture together.

  4. Bake for 18-20 mites or until the macaroons have turned golden brown. Cool on a wire rack.

Serves 12.
