Tomato and Sausage Pasta
Tomato Sausage Penne
Ingredients:
1 tablespoon olive oil
1 white onion, diced
1 pound Italian sausage
2 cloves minced garlic
½ cup dry white wine
2 teaspoons dried Italian seasoning
28 ounces canned diced tomatoes
Salt to taste
½ cup heavy whipping cream
1 pound penne pasta
Fresh grated parmesan cheese, optional
Chopped parsley for garnish, optional
Directions:
1. In a large sauté pan over medium-high heat cook diced onion in olive oil until it becomes translucent and begins to brown. About 15 minutes.
2. Meanwhile fill a large pot with water and bring to a boil. Cook penne according to package directions. Drain and set aside.
3. Add Italian sausage cooking until all the pink is gone and some pieces brown. Add minced garlic and cook for 30 seconds.
4. Deglaze the pan by adding the dry white wine. Stir well making sure to get all the brown bits off the bottom of the pan. Add the Italian seasoning and allow the mixture to reduce for about 3 minutes.
5. To the pan add the canned diced tomatoes. Season to taste with salt. Reduce heat to low and simmer for 10 minutes.
6. Add 1/2 cup heavy whipping cream. Simmer for 3 minutes more. Add the drained cooked pasta stirring to combine. Serve with fresh grated parmesan and parsley.
Serves 4-6.
