Easy Greek Yogurt Bark

If you know me at all then you know my obsession with yogurt. I eat it at least once a day, sometimes twice. Yogurt is full of protein to keep me full. I prefer whole milk yogurts for that reason, more protein. Yogurt is the perfect base for an infinite amount of toppings. Sometimes I even use it as a replacement for mayonnaise or sour cream.

June in National Dairy Month so in the spirit I chose my favorite dairy product to create a new recipe with. Now that summer is in full swing I like to minimize the usage of the oven. The freezer and no-bake recipes become my best friend.

First things first, clear out a space in the freezer. That’s right, eat the pint of ice cream so you have room for the baking sheet. Permission granted. Gather your ingredients for the bark.

You will need:

Whole milk Greek yogurt

honey

Traina® Home Grown Summer Blend fruitons®

slivered almonds

dark chocolate chips

unsweetened shredded coconut

The first step to make my easy Greek yogurt bark is to stir together the yogurt and honey. Once combined, spread onto a parchment lined baking dish, about 1/4'‘ thick. Then, sprinkle on all of the toppings. Once all of the toppings make it onto the yogurt, lightly press them down so they stick. Freeze the bark for 3 to 4 hours or until completely frozen. Once frozen break into pieces. The bark is best when stored in an airtight container in the freezer for up to 3 months.

I absolutely love fruitons®. They help me to get my daily fruit in year-round. I heard that they are coming to Save Mart stores in the Fall of 2019 so keep your eyes peeled. Otherwise I purchase them from the company’s website, Traina Foods. Since they are already in bite-sized pieces it makes it super easy to add to dishes.

Ingredients:

2 cups plain whole milk Greek yogurt

2 tablespoons honey

1/4 cup Traina Home Grown Summer Blend fruitons®

2 tablespoons slivered almonds

1/4 cup unsweetened shredded coconut

2 tablespoons dark chocolate chips

Directions:

  1. Line a baking sheet with parchment paper. Set aside. In a medium bowl combine yogurt and honey stirring until thoroughly combine. Spread yogurt mixture in an even layer on the parchment lined baking sheet. It should be about 1/4” thick.

  2. Sprinkle on Traina Home Grown Summer Blend Fruitons, almonds, shredded coconut, and dark chocolate chips. Freeze 3-4 hours or overnight. When frozen, break into large pieces. Store in an airtight container in the freezer.

Serves 6-8.
