Ingredients:

6 slices bacon

1/2 cup red onion, sliced 1/8” thick

1/3 cup marinated artichoke hearts

1/2 cup Traina® Home Grown fruitons® Seasoned Sun Dried Tomatoes

2 cloves garlic, minced

8 large eggs

1/4 cup water

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon pepper

3 tablespoons olive oil

Directions:

  1. Preheat oven to 375°F.

  2. Cook bacon until crispy using your favorite method. Allow to cool then chop.

  3. In a medium bowl, combine bacon, red onion, artichokes, and fruitons®. Stir to combine and set aside.

  4. In a second medium bowl, whisk together eggs, water, Italian seasoning, salt, and pepper. Set aside.

  5. In a 9” nonstick, oven-safe skillet heat oil over medium-low heat. When hot, add garlic stirring continuously until it begins to smell fragrant. Add fruitons® mixture to the pan and sauté for 3 minutes. Add eggs into the pan and give it a quick stir. Once the egg starts to set around the edges, move pan to the oven to finish cooking. Bake for 10 minutes or until eggs are completely set. Remove from the oven and allow to cool 10 minutes before transferring to a serving plate. Enjoy it warm, room temperature, or cold.
